Almond drink(Badam milk)
Almonds are good source of Vitamin E and mono saturated fat.This mono saturated fat is one of the two good fats which lowers LDL Cholesterol.Here is a recipe for almond milk which you can serve for your guest as a dessert.
Ingredients needed:
1 Cup Almonds
6 1/2 Cups Milk
Few Strings of saffron(Optional)
Few pistachios Chopped(Optional)
Method:
Soak almonds in warm water for 2 hours.Peel off their skin.Put these almonds in a mixie or blender and first grind these almonds alone for few minutes, then add about 1 cup milk and grind together so that all almonds are grinded together.In the mean time start to boil the 6 cup milk in a heavy bottom pan, after 5 to 6 minutes, add these grinded almond paste into the boiling milk and simmer the stove.Allow it to cook for about 25 to 30 minutes in low flame, stirring occasionally to ensure that the bottom is not getting burnt.In the midst of this 30 minutes, in about 1 tablespoon of warm milk , add the saffron strings and smash them so that they give out color, now pour this saffron mix into the almond milk and stir well.Allow it to cool down and refrigerate for 2 or 3 hours before serving.While serving , pour this into the cup and add some chopped pistachios to that on top.We used 6 1/2 Cups milk, but only about 5 to 51/2 cups will be left to serve, since we boil the milk for 30 mins.So plan in accordance and use the milk quantity.
